Scallion Pancake, Bon Dimanche Scallion Pancake

Mis En Place, i.e. Ingredients

  • 200g AP flour
  • 170g boiling water
  • A pinch of salt
  • Scallion
  • Sesame oil
  • Soy sauce
  • Vinegar

Method

For two pancakes. To make the dough, mix flour, salt and boiling water in a bowl. Knead for 10min. Leave for 20min covered with clean film.

Knead again for 5min. Cut in 1/2. Stretch the dough roundly, brush sesame oil, sprinkle some sea salt/scallion. Roll it up. Make a snail. Leave it covered for 20min.

Then crush the snail from the above and flatten. Cook both sides in a pan slowly with sesame oil.

Eat with 1:1 parts soy sauce to vinegar.
