On the hob, cook the pak choi, celery, mushroom, yam, scallion, and onion on low/medium heat until browned—with olive oil and seasoned with sea salt and black pepper.Add kale, ginger, garlic, and stock to the pan. Bring to a boil, then let simmer, covered. Later in the cooking, add cayenne, turmeric, mustard powder, black pepper, and sea salt to taste. In the last few minutes of cooking, add the parsley (or use as a garnish when plating).
Plate the soup and top with a lemon juice and a drizzle of olive oil. Guten appetit!
