Honey Glazed Carrots,

  Excellent!

Instructions

Trim and scrub carrots. Remove the base of the garlic, and remove skin that's peeling off. Place the carrots and garlic into a large skillet, and fill with enough water to cover the vegetables. Season with sea salt, and bring to a boil. Next, reduce the heat, cover, and simmer for about 10 minutes until the vegetables are tender.

Strain the vegetables and discard the water. Place the pan back on the stove, returning the heat to medium high. Add olive oil, honey, red chile flakes, and rosemary. Cook until bubbling, then add the carrots and garlic. Cook for about five minutes, coating the vegetables. Season with sea salt. After removing the carrots and garlic from the water, I like to remove the remaining garlic skins. Makes it easier to eat.

  • 01.5 lb multi-coloured carrots
  • 01 head garlic
  • 01 T extra virgin olive oil
  • 03 T honey
  • 02 t red chile flakes
  • 02 sprigs fresh rosemary
  • coarse sea salt
