Pastina Soup, Vegetable filled, soothing broth for illness

In an Instant Pot, add water, onion, celery, carrots, and sea salt. Pressure cook for 8 minutes. Meanwhile, boil the pastina in a pot of salted water.Using a slotted spoon, relocate the veggies into the blender with two ladles of broth, and blend until smooth. Then add the blended veg back to the broth and stir.
To plate, place pastina in the bowl, and ladle broth over it. Grate fresh parmiagiano over the top, and sprinkle parsley. Guten appetit!

- 01 onion, peeled
- 02 ribs celery, halved
- 03 carrots, peeled
- Parsley, chopped
- 00.5 t sea salt
- Pastina
- Parmiagiano

09 January 2023. With a swollen throat, I had trouble with the orzo I used in place of pastina. Plating the broth with grated parmiagiano and parsley is tasty as well. The broth can also be warmed and enjoyed from a mug.
