Spaghetti Marinara,
Mis En Place, i.e. Ingredients
- Spaghetti
- Onions, sliced
- Shallots, sliced
- Garlic, smashed and sliced
- Diced tomatoes, canned
- Cherry tomatoes
- Rosemary
- Olive oil
- Butter
- Sugar
- Sea salt
- Parmesan, grated
Method
Bring olive oil, onions, shallot, garlic, tomatoes, rosemary, and salt (to taste) to a boil, then simmer. Once they've softened, burst the cherry tomatoes.Cook the spaghetti al dente. Reserve at least 1 c cooking water.
Blend the sauce. Season with salt and a small bit of sugar to taste. The sugar will cut the acidity. Keep in mind that the parmesan will add saltiness.
Mix spaghetti and sauce, using the cooking water to help bind. Plate and top with freshly grated parmesan. Buon appetito!
