Barley & Smoked Paprika Potatoes,

  Excellent!

Instructions

Preheat oven to 400˚. Cook barley (which can take up to 60 minutes).

Mix potatoes, garlic, heavy cream, paprika, salt, and turmeric. Toss together so that potatoes are coated well. Bake for 10 minutes and then stir. Bake for another 15–20 minutes until the potatoes are tender. Mix barley and potatoes together and serve. Top with egg, goat cheese, and green onions.

  • 02 c cooked barley
  • 01 lb red potatoes, chopped
  • 01 garlic clove, minced
  • 02 t smoked paprika
  • 01 t turmeric
  • 00.25 t sea salt
  • 03 T heavy cream
  • 02-03 T green onions, sliced
  • 04 hard boiled eggs
  • 02 oz goat cheese

Substitutions—Coconut milk (full fat) in place of heavy cream; can use a different grain in place of barley.
