Garlic Marinara,

Instructions

In an Instant Pot for 8 minutes—or on the hob until everything is softened: tomatoes, carrots, onion, garlic, sea salt, and a little water to keep the food from burning (if in an Instant Pot).

Then blend it all with the tomato paste, taking care with the hot liquid.

Cook the sauce on medium heat on the hob with four smashed cloves of garlic. This is to cook off some of the liquid and thicken the sauce. Remove the garlic before eating.

Cook the noodles; I used De Cecco No. 9 Angel Hair. Then mix noodles, sauce, and a bit of pasta water. Place in bowl and top with burrata, olive oil, fresh basil, and flake sea salt.

Variations for leftovers: Italian sausage meatballs in marinara (with a side salad). And extra sauce can be frozen.

  • 3 lbs tomatoes, quartered
  • 2 carrots, cut into chunks
  • 1 onion, quartered
  • 4 garlic cloves
  • 1 t sea salt
  • 6 oz tomato paste
  • pasta, angel hair
  • burrata
  • olive oil
  • fresh basil
